Description

This Feta Avocado Dip offers a delightful blend of creamy and tangy flavors. Ripe avocados are blended into a smooth, vibrant green base, providing a rich and velvety texture. This is complemented by the salty, crumbly cubes of feta cheese, which add a pleasant textural contrast and a sharp, savory note. The dip is prepared by simply blending the ingredients until smooth, then gently incorporating the feta.


Ingredients

  • 2 ripe avocados, pitted and scooped
  • 4 oz (113g) feta cheese, divided (half crumbled, half cubed for topping)
  • 2 tablespoons fresh lime juice
  • 1 clove garlic, minced
  • 2 tablespoons extra virgin olive oil, plus more for drizzling
  • 1/4 cup fresh parsley or cilantro, chopped (plus more for garnish)
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper


Instructions

  1. In a food processor or blender, combine the scooped avocado flesh, 2 oz (56g) of crumbled feta cheese, lime juice, minced garlic, 2 tablespoons of olive oil, chopped parsley or cilantro, salt, and black pepper.
  2. Process until the mixture is smooth and creamy, scraping down the sides as needed.
  3. Transfer the dip to a serving bowl.
  4. Top with the remaining 2 oz (56g) of feta cheese, cut into cubes.
  5. Drizzle lightly with additional extra virgin olive oil and garnish with extra chopped parsley or cilantro, if desired.
  6. Serve immediately with crackers, pita bread, or vegetable sticks.

Notes

Ensure avocados are ripe but not overripe for the best texture and flavor.

Adjust the amount of lime juice to your preference for tanginess.

For a smoother dip, you can omit the crumbled feta in the food processor and add all feta as cubes on top.

To prevent browning, press plastic wrap directly onto the surface of the dip if storing.

This dip is best enjoyed fresh.
